Guar gum is a plant‑derived hydrocolloid obtainable from both carob pods and guar beans. Carob trees are perennial shrubs largely cultivated across the Mediterranean coast. In comparison, guar beans are annual leguminous crops, primarily grown in semi‑arid regions such as India, Pakistan and Texas in the United States. The crop thrives in environments featuring large diurnal temperature variations and sufficient rainfall.
Commercial‑grade guar gum is predominantly extracted from guar beans. Once mature, guar beans are de‑hulled and transported to milling plants. Through thermochemical treatment, the seeds are separated into three components: endosperm flakes, germ and hull. The protein‑rich germ is generally turned into animal feed, whereas endosperm flakes undergo further purification to produce the final guar gum powder.

Obtained from seed endosperm of Cyamopsis tetragonoloba, guar gum (principal component: guaran) features a mannose‑galactose molar ratio around 2:1. This hydrocolloid disperses well in cold water generating viscous colloidal solutions; heating promotes additional viscosity build‑up. The viscosity of its 1 % water solution is 2,000‑3,500 cP measured at 25 °C. As a multi‑functional thickening and stabilizing agent, it is incorporated into ice‑cream, baked goods, sauces and beverage formulations, with typical use concentrations between 0.1 % and 1.0 %.
