Products Description of Lecithin CAS#8002-43-5
Industrial-grade lecithin can achieve a purity of over 99%. It appears as a pale yellow to brown viscous liquid or powder and possesses a slight, characteristic nutty odor.
Lecithin has a melting point of 23–26°C and decomposes when heated above 100°C. Its vapor pressure at 25°C is negligible, and its relative density at 20°C is approximately 1.03.
Lecithin dispersible in water and is soluble in chloroform, ether, and vegetable oils, but it is insoluble in acetone. It is relatively stable under normal conditions but is incompatible with strong acids and bases.
