Potassium bromate CAS#7758-01-2
Potassium bromate is the potassium salt of bromate and is commonly used in the United States as a flour improver. During bread-making, it helps strengthen the dough and allows it to rise more effectively.
Potassium bromate (KBrO₃) is an oxidizing agent that has been used as a food additive, primarily in bread production. However, it has been identified as a potential carcinogenic agent. Studies have shown that potassium bromate is carcinogenic in rats and exhibits nephrotoxic effects in both humans and laboratory animals upon oral administration.
Research has demonstrated that KBrO₃ can induce renal cell tumors, peritoneal mesotheliomas, and follicular cell tumors of the thyroid. Furthermore, studies on its carcinogenic mechanism indicate that KBrO₃ is a complete carcinogen, acting as both an initiating activities and a promoting activities in the development of renal tumor in rats.

Product Application
Potassium bromate (KBrO₃) is primarily used as a flour-maturing agent and dough conditioner. In the baking industry, it has long been considered one of the most effective dough conditioners available. However, scientific evidence published in 1990 raised concerns that bromate might be carcinogenicity. In light of these potential health risks, the joint body of the Food and Agriculture Organization of the United Nations and the World Health Organization decided to remove potassium bromate from the list of approved flour-treatment additives.
In non-food applications, KBrO₃ is used in analytical chemistry as an oxidizing agent, a primary standard, and a brominating agent. Its oxidizing properties are also utilized in neutralizing formulations for home permanent-wave treatments; these typically feature concentrations of 5% to 25% and a pH range of 4 to 9, often in combination with sodium bromate, sodium perborate, or hydrogen peroxide.
