Fumaric acid is a white, odorless granular material or crystalline powder. It is soluble in alcohol, slightly soluble in water and ether, and only sparingly soluble in chloroform.
It is commonly used as an alternative to tartaric acid and provides a clean, tart, acidic-sour taste without any noticeable odor.
Fumaric acid can be produced through the fermentation of glucose by certain fungi, such as Rhizopus nigricans, or by the oxidation of furfural using sodium chlorate in the presence of vanadium pentoxide.
