β‑Carotene belongs to the carotenoid family. It is a widely‑distributed natural pigment with good stability. As an orange‑yellow, fat‑soluble substance, it occurs as lustrous rhombohedral crystals or crystalline powder. It is mainly sourced from green plants and yellow‑orange fruits.
Dilute β‑carotene solutions show orange‑yellow to yellow hues; color turns deeper orange at higher concentrations. A faint reddish tone may also appear, subject to the polarity of the applied solvent.
