It has a log Kow (lgP) value of 1.91 and a calculated Henry’s law constant of 105 Pa·m³/mol, alongside a relative density of 1.062 at 20 °C. At 20 °C, its water‑solubility reaches 2.7 g/L, and it is miscible with most common organic solvents within 15‑25 °C. Regarding stability, DMDS remains stable upon heating up to 300 °C, yet it becomes thermally unstable when heated in the presence of oxidizing agents, with a freezing‑point of 16 °C.

Products Application
Dimethyl disulfide (DMDS) acts both as a chemical intermediate and food flavor additive, improving the taste characteristics of onion, garlic, cheese, meat, soups, savory mixes and fruit flavors. Within oil refineries, it is deployed as a sulfiding agent. In food manufacturing, it supports the alpha-substitution reaction of 2-methylfuran-acrolein for edible product synthesis. DMDS is also an essential raw material for producing 4-(methylthio)phenol and can substitute methyl mercaptan in jet fuel formulations. Apart from the above applications, DMDS can be used as an artificial flavoring substance and corrosion inhibitor. In agriculture, it serves as a highly effective soil fumigant.
