Oleic acid is a naturally occurring unsaturated fatty acid featuring a carbon-carbon double bond within its molecular structure. As one of the component fatty acids of olein, it ranks among the most ubiquitous natural unsaturated fatty acids. It is produced by the hydrolysis of animal and vegetable fats and oils, with the chemical formula CH₃(CH₂)₇CH=CH(CH₂)₇COOH. Glyceryl oleate serves as a primary component in olive oil, palm oil, lard, and various other animal and vegetable oils. Industrial-grade oleic acid generally contains 7–12% saturated fatty acids including palmitic acid and stearic acid, alongside trace quantities of other unsaturated fatty acids such as linoleic acid.

Oleic acid can be epoxidized to yield epoxy oleate, a widely adopted plasticizer. Oxidation treatment converts oleic acid into azelaic acid, which is an essential feedstock for polyamide resins. Beyond these, oleic acid finds use as a pesticide emulsifier, textile printing and dyeing auxiliary, industrial solvent, metal ore flotation agent and mold release agent. It also supports manufacturing of carbon paper, ballpoint pen inks and typing stencil sheets. A full range of oleate compounds are key derivatives originated from oleic acid. As a chemical reagent, oleic acid is applied as a chromatographic reference standard and deployed in biochemical analysis to detect elements including calcium, copper, magnesium and sulfur.
