Sorbitol is a polyol (polyhydric alcohol) humectant produced by the hydrogenation of glucose. It has good solubility in water but poor solubility in oil.

It is approximately 60% as sweet as sucrose and provides a caloric value of 2.6 kcal/g. Sorbitol is highly hygroscopic and has a pleasant sweet taste.
