Products Application
Sodium bicarbonate functions as a leavening agent. At 25 °C, a 1 % aqueous solution of the chemical registers an approximate pH value of 8. When combined with food‑grade phosphates (acidic leavening ingredients), it reacts to generate carbon dioxide gas. During baking, the released carbon dioxide expands, endowing baked products with increased volume and a soft mouthfeel.
It is also applied in dry‑mix beverage formulations to produce carbonation. The fizzing effect occurs upon adding water to blends containing both sodium bicarbonate and an acid. Furthermore, it serves as an essential constituent of baking powder. This substance is also known by alternative names: baking soda, bicarbonate of soda, sodium acid carbonate and sodium hydrogen carbonate.
